Harriot Pleydell-Bouverie is the founder of Mallow & Marsh. A brand on a mission to show everyone how delicious marshmallow really is. Harriot’s ambition has been to change the face of confectionery by pushing the boundaries of innovation. She saw an opportunity for premium grown-up treats and set out to create a tasty alternative to the usual suspects on the confectionery shelf. Anyone who has tried a Mallow & Marsh can taste this vision coming to life.
The range of marshmallow bars and pouches can be found nationally in a band of stockists including Tesco’s, Sainsbury’s, Asda, Boots and BP. Although Harriot is no longer running the business from her kitchen, the marshmallow is still handmade in the UK, with no artificial colours or flavourings. The results? The business has grown from strength to strength, and is on track to make over 270 tonnes of marshmallow this year alone.
As the brand’s profile has grown, innovation continues to be the cornerstone of Mallow & Marsh and a key focus for Harriot. Her favourite part of the job is developing new products and she is still regularly whisking up new recipes, either in the factory or in her own kitchen. Outside of Mallow & Marsh Harriot remains true to her big passions – food and entrepreneurship – and dedicates time to helping inspire others set up their own business.
